Today's meals....

Breakfast - 4 oz spiral cut ham, 1 oz roasted pecans
Lunch - wasn't hungry and was running high (ate some SF candy that my daughter made for Christmas last night) so only had 1 oz. cheese, NSA pickles
Snack - Pork rinds
Dinner - Sloppy Joe without the bun, pork rinds
Snack - NSA ice cream bar

I was too lazy to figure carb counts, but I don't think I am over 60g today.

Two days to go...

So my family (yes, my entire family is on board) officially goes lo-carb beginning January 1st. I've already got our meals planned for the first week. My husband and daughter went through my six (yes, I have six) low-carb cookbooks and marked the things they'd like to try. My boys, who eat anything are also ready to go, though my youngest is a little worried. He is 16 and has the fastest metabolism in the house. In fact, since football season ended, he has lost weight (which he can not really afford to do as he is 5'9" and now at about 146...during football when he was working out heavily, he was at about 155). So, he'll definitely have to have larger portions of the simple carbs that I will be serving. But I think the additional protein will actually be beneficial to him.

I am currently testing quite a bit and with a little help will be adjusting my dose of lantus (I will probably end up splitting the dose) as well as changing to Humalog instead of Humulin R. I've already picked up a sample vial from the doctor and will switch sometime in January.

I've rejoined my diabetic communities and am beginning to get active in them and have also joined a couple of low-carb communities. No more denial for me. I must be CONSISTENT in dealing with this disease. It is way past time.

So far behind....

Of course the holidays got the best of me...my eating was still on track for the most part, but my recording was not. I'm back now and back on track. Will be posting meals again tomorrow.

Fridays are hard as my daughter and I have a standing mom/daughter lunch at the local Mexican restaurant. So lunch won't be too low carb.

8:00 am 1/2 medium cucumber (seeds scooped out) lined with egg salad - 4g carbs
12:00 pm about 8 chips, about 1 tbsp salsa, salad with fajita beef, onions, bellpeppers, cheese, 1 teaspoon guac, 1/2 margarita - estimated 40g carb
6:30 pm Shrimp stir fry w/veggies, 1/2 cup yellow rice - 22g carbs

Total 66g carbs

7:30 am 2 slices lean ham, 1 slice cheese, 1/2 oz cashews - 7g carbs
1:45 pm 4 oz. chicken breast w/mustard, 6 NSA mini dill pickles, 12 NSA bread and butter slices, 1/2 oz. roasted pecans - 8g carbs
6:00 pm 1 hot dog bun, 2 weiners, 1/2 serving Doritos, mayo, mustard, 1 Michelob Ultra - about 40g carbs

Total - 55g carbs

Day 3

7:30am 1 oz Cashews- 8.6g carbs, 156 calories
12:20pm 1 oz jalopeno jack cheese, 1 oz. sharp cheddar cheese, 4 oz chicken breast w/mustard, 6 NSA baby dill pickles, 12 NSA bread and butter pickle chips, 1 oz roasted pecans - 12g carbs, 522 calories
6:50pm 3 small slices of fried venison (did not eat the breading), 6 french fries, 1 small homemade hush puppy, 1 small cucumber - not sure on carb or calorie count since I didn't eat breading

When my husband hunts deer, he always fries fresh meat. Normally he fries mine without breading, but he forgot to tell my daughter and she was cooking. I do know that tonight was a lot more carby than I would have liked. :(

12:45 pm - 1 oz Jalopeno Jack cheese, 1 oz Sharp Cheddar cheese, 6 NSA baby dill pickles, 12 NSA Bread and Butter pickle slices, 1.5 oz jerky, 2 dk chocolate orange sticks (23g carbs)
6:30 pm - 1/2 cup red beans over 1/4 cup rice (32g carbs)

Total 61g carbs

Back at blogging...

I do so much better when I have one place to put down all my thoughts, keep track of my meds, my successes, my failures, even my menus so that I can see what's working and what is not. So, I am back to blogging. It keeps me honest and I love reading other blogs as well. I need all the help I can get!
